Our Shui Xian pours down like liquid amber: luminous and incredibly smooth. The first sip will make you think of coffee, before developing into something sweet and syrupy that sticks to the back of the throat. The third layer is fleeting and delicate, like a wild orchid.
Beneath all this is the iconic Wuyi "rock rhythm" that tells you this tea has climbed the cliff before it reached your cup.
After the leaves unfurl, they show raised 'toad skin'-like patterns, with thick veins that indicate fibrous resilience and the age of the tree.
Aroma: Roast and floral-fruity fragrance on the dry leaves. After brewing, it transforms into a combination of woody sweetness, orchid scent, and bamboo leaves, with a delicate lingering fragrance at the bottom of the cup.
Tasting Notes:
Steep 1-3: Roasted coffee, bittersweet caramel, mineral
Steep 4-6: Orchids, brown sugar
Steep 7-9: Dried fruits, honey
Steep 10+: Gentle wooden tones, delicate flowers
Texture: Smooth and full-bodied
Endurance: 8-10 steeps Kung Fu style; 4-5 steeps (5 minutes each) with a large cup
How to brew: This tea doesn't require any ceremony. It doesn't require small cups or timed rituals. It just requires you to stop and taste that mountain.
Large cup style: Use 8.3 grams (1 pack) of tea in a 400 ml glass, with boiling water (100 degrees Celsius). Steep for 4-5 minutes, then add 1 minute each time. It easily lasts for 4-5 steeps, but if you have time and patience, you can brew it for more than 6 steeps.
