Old Zheng Yan, 60 years old, is a six-decade testament to the tranquility rooted in the core cliff of Wuyi Mountain. Shui Xian varieties are among the oldest in Wuyi, cherished for their thick leaves and significant aging potential. These ancient shrubs have developed deep and extensive roots, drawing nutrients from rocky soil and establishing a layered characteristic for genuine old tea.
The leaves are harvested in spring and undergo a meticulous process of withering, swaying, and oxidation before being traditionally roasted with charcoal. The fire is carefully managed to support, rather than conceal, the natural expression of tea.
Aroma: Warm wood with a subtle yet rich freshness. The cup fills with the scent of wild orchids, roasted grains, and mineral-like earthy notes.
Tasting Notes:
Steep 1-3: Bold, rich, and flavorful, showcasing the strength of the tea leaves.
Steep 4-6: The taste deepens. The aroma gradually highlights the woody and mossy notes, offering the richest tasting experience.
Steep 7+: The tea remains sweet, smooth, and aromatic, with a long-lasting cool taste. The leaves, fully unfolded, display a gentle copper-red hue.
Texture: Thick, smooth, and sticky. Rich and full-bodied.
Endurance: This tea is particularly durable due to its outstanding quality. By properly brewing using nearly boiling water, it can last for 10 to 15 steeps or more.
Brewing Recommendations:
Kung Fu Style: Use 8.3 grams of tea in a ceramic gaiwan or Yixing teapot, with 95°C–100°C water. Rinse quickly; then start with a very short steep time of 5-10 seconds before gradually increasing the subsequent steeping time.
