Deep within the rugged cliffs of Wuyi Mountain are century-old shui xian tea trees. Called "Old Clusters", these trees have their trunks and branches cloaked in lush green moss, bearing witness to the passage of time and the pristine, untouched mountainous environment.
The distinctive cliffside soil contains high levels of natural minerals, giving the tea a unique “rocky charm” and a deep structure. The large, robust leaves of the shui xian variety absorb these minerals, creating a mature, layered flavor profile that younger trees cannot achieve.
This tea is harvested in spring and traditionally processed using a slow charcoal roasting method, showcasing a steady confidence nurtured by the passage of time and meticulous craftsmanship.
